What distinguishes their Black Diamond process from a standard natural process is the intentional curing and longer period of dehydration. The drying period takes between 15 to 22 days. Since it’s a slow drying process, they constantly check on the temperature and movement of the beans to prevent overheating. Las Lajas looks to obtain sweeter, clearer, and brighter coffees with the Diamond process.

We taste sweet cranberry and cascara with some mild cacao and a boozy acidity. This coffee packs a lot of flavor but has a pleasant, clean finish.
